Elderflower Soda Recipe by Fusillo Lab


Light, fragrant, and known for it’s rich amounts of antioxidants, elderflower is a great herb for crafting a refreshing summer drink. In collaboration with Fusillo Lab, we present an elderflower soda recipe infused with delicate sweetness. This simple and elegant beverage is ideal for cooling down on warm days and adding a touch of sophistication to any gathering.

Ingredients (Approx. 20 servings)

• 10 elderflower heads
• 3 organic lemons
• 500ml water
• 500g sugar
• Sparkling water

Directions

1. Clean the elderflower heads by shaking them gently to remove any insects, then rinse them under cold water. Remove all the green stems, leaving just the tiny flowers. Rinse the lemons under cold water and slice them.

2. In a CAST water jug 1.2L, begin by placing a handful of elderflowers, followed by a lemon slice. Continue to alternate layers, ending with a lemon slice on top. Pour cold water over the flowers and lemons, and gently press down to ensure they are fully submerged. Cover the jug with the lid and let it sit in a cool place for 48 hours.

3. After 48 hours, pour the mixture from the jug into a medium pot. Remove any flowers that fall in while filtering. Squeeze the lemons to extract as much liquid as possible. Add the sugar to the pot and bring the mixture to a boil. Reduce the heat and let it simmer gently for another 5 minutes.

4. Once the syrup has cooled, strain and place in a jug/carafe.

5. To serve, fill a CAST iced tea glass with ice cubes and add 50ml of elderflower syrup. Top it with soda water and garnish with lemon peel.

6. You can store the elderflower syrup, properly sealed, in the refrigerator for up to 3 to 4 weeks.
