Lemon Curd Tiramisu

Lemon curd and mascarpone are an excellent combination. This lemon tiramisu is a light, refreshing treat that delights the senses. Refer to our Lemon curd recipe for this preparation.

Ingredients
  • 3 tablespoons Lemon curd
    (See Lemon curd recipe here)
    3 tablespoons Mascarpone cheese
    4 Finger biscuits
    [Step A]
    1 teaspoon Lemon juice
    1 tablespoon Hot water
    1 tablespoon Sugar
Instructions

  • In a bowl, combine the ingredients for [Step A] and stir until the sugar has dissolved.

  • Crumble the finger biscuits into serving cups and drizzle the syrup evenly over them.

  • In another bowl, combine the mascarpone cheese and lemon curd. Whisk gently, incorporating air, until smooth and light.

  • Spoon the lemon cream over the biscuits. Tap the bottom of the dishes lightly on the counter to settle the mixture, then chill in the refrigerator.

  • To finish, sprinkle with finely grated lemon zest.

    *If prepared in small cups, this recipe can also be served as four mini desserts.

If you have prepared lemon syrup on hand, you can substitute 2 teaspoons of lemon syrup for the syrup in [Step A].
